This wine is produced from grapes which are grown in accordance with organic practices in the vineyard of Colle Paolino, an area of 13.500 s.m. The land is situated at an average altitude of 200 meters a.s.l., with a south exposition, sheltered at North, with marked slopes.
The varieties of vine here cultivated since 1994 are: Nero Buono 40% and Montepulciano 60%, with a density of 3000/4000 plants per hectare. Our system of planting is the high espalier, with controlled grassing of the land. The yield for each plant is limited to approximately 1,5 Kg. of grapes. Thanks to the southerly exposure of this vineyard on which the sun rises and sets, and the rigorous pruning and the thinning out of the excess bunches executed in the month of June and July, obtained grapes are very healthy, ripe and rich in extracts. Grapes are manually harvested in different times, de-stemmed and left to ferment for a period of ten to fifteen days. Later the masses are assembled to obtain the desired product. The wine obtained ripens for approximately 24 months in oak barrels of different sizes. After the bottling, the wine refines for some months before being released for sale.
DITHYRAMBO The Dithyrambo is a classical poetry composition whose origins are by tradition related to the cult of the Greek god Dionysus – the Roman god Bacchus – god of wine and nature. It consisted of invocations and lauds intoned by the followers of the god during bacchanalia, i.e. Dionysian revels and processions. The Dithyrambo was in fact sung by the chorus of Bacchus priestesses, the Bacchantes or maenads, accompanied by musical instruments such as citharas and flutes. Connected to the euphoria produced by drunkenness, it took various forms and modes. A drama-action arose very often between the leader and the choir components to which Aristotle attributes the origins of the Greek theatre.
