This wine is obtained from a clonal variety of the famous Bellone grape grown in the Cori region since ancient times. The grape is called the “Arciprete”, i.e. the Archpriest. The story goes that in the 18th century, when much of the land of Cori was property of the Church, the Archpriest, whose function was to find the wine for the Mass and other religious ceremonies, choose this grape for its strength, softness and wonderful scent. The grape thereafter became known as the “Arciprete”.
These grapes come from more than one plot, but the most extensive on the estate is on the Collesanti hill at an altitude of 220 metres a.s.l. with a good exposure. As with all our wines, the organic methods are faithfully adhered to and the land is not overworked: we carry out just the regular cutting of wild grasses.
After the harvest, the grapes are taken quickly to the winery, de-stemmed and put through maceration for a short time.
The must obtained by gentle pressing is thermostatically controlled during fermentation and afterwards rests in stainless steel tanks. The finished wine is ready for bottling in Spring.
CHARACTERISTICS
A clear and shining yellow colour. Scents of golden apples, anise and apricot. Dry and harmonious.
