In the intent to demonstrate the versatility of native Lazio vines and to express the fulfillment of particular and unique products, this Brut sparkling wine comes to life from the Bellone Grapes, which are grown in the estate property and conducted exclusively under organic farming methods. The health of the grapes and the achievement of the best balance amongst different chemical and physical parameters, determine their correct maturity, which usually is reached in the last ten days of August. The grapes are handpicked, gently placed into collection boxes and transferred to the winery during the coolest hours of the morning. The soft pressing of whole grapes through pneumatic presses, the natural cold decanting of the resulting must and its fermentation in temperature controlled stainless steel tanks, allows the achievement of the so-called "base wine". Following a short period of refinement in steel, bottling happens before the addition of a solution of draught, mainly consisting of yeast and sucrose, fundamental for the "re-fermentation" and the "frothing" which occurs in the bottled product (classic method). The period from the second fermentation to degorgement lasts an average of about 20 months, during which the lees originated from the lysis of the yeasts bestow special characteristics to the liquid. A further period of 4-6 months follows before marketing, during which the sparkling wine rests in bottle.
